What you can expect

An authentic day on the water

Weather, tides and the day's catch shape the final plan.

  1. 01

    Morning departure

    We meet at the harbour and depart for the fjords. You are welcomed on board by your team of three — skipper, freediver and chef. Your captain briefs you on the route while the crew prepares the boat for the day.

  2. 02

    Cruising and scenery

    We navigate through the fjords toward a sheltered bay chosen for the day's conditions. You enjoy the scenery, watch the crew prepare, and feel the anticipation of a meal unlike any other.

  3. 03

    The freediver enters the ocean

    Once we drop anchor, the freediver enters the cold, clear water and catches fresh fish and raw ingredients by hand — scallops, crabs, seaweed and whatever the sea offers that day. He brings his catch back to the boat.

    Arctic dining

    From the ocean to the table in its most literal sense. The chef transforms the fresh catch into a meal prepared right in front of you, using Arctic herbs, regional produce and traditional techniques. The menu is shaped around your preferences and what the sea has given.

  5. 05

    Relaxation and scenery

    After the meal, we continue cruising or remain at anchor. Time to digest, photograph and take in the surroundings — a view no restaurant in the world can match.

  6. 06

    Return to harbour

    We return to Tromsø in the afternoon or early evening, with the taste of the Arctic still fresh.

The Sea & The Seasons

A cuisine shaped by the cold

The cold, clear waters of Northern Norway produce some of the best seafood in the world. Short growing seasons and long traditions of preservation have created a cuisine that is simple, honest and deeply connected to place. We take only what the sea offers that day, gathering by breath and by hand — no nets, no engines, no waste. The menu is designed around your preferences and dietary requirements, and it changes with the season: warming dishes in winter, lighter fare that takes advantage of the midnight sun in summer. Conditions and tides can shift the plan, and no two days are the same. What we can promise is food that was in the water hours before it reaches the plate, a team that knows these waters intimately, and a dining experience that could not exist anywhere else.
